Stuffed Marrow

1. Slice the marrow in half lengthwise. 2. Scoop out the seeds and soft stuff. Put this in the compost pile to ensure that you will have enough marrow next year. 3. Cut a bunch of stale bread into cubes. (I keep a ziplock in the freezer full of bread cubes - made from that stale stuff at the end of the loaf that usually sits in the bread basket until it turns green). The amount you use depends on how full you want you marrow to be. Remember the cubes will swell as they absorb moisture. 4. Add any vegetables you find in the refrigerator that are not stuck to the bottom of the vegetable drawer. 5. Mix in enough cottage cheese to give it that cheesy look. 6. Mix some liquid (such as wine, chicken broth, orange juice, or water) with 1 or 2 eggs or egg substitute and some lemon juice. Use enough to make the cubes moist but not real soggy. 7. Mix in chopped fresh garlic, salt and pepper. You can also add your choice of fresh or dried spices and herbs. 8. Arrange the shrimp in the squash halves with the meaty part toward the center and the tails sticking out over the sides. (Dave thought this up. It looks really cool.) 9. Pile the cube mixture on top of the shrimp and sprinkle with Parmesan cheese. 10. Put squash halves into a baking pan filled with about 1" of water. 11. Bake at 350 degrees until the squash is tender when pierced with a fork.
